Whole Wheat Crackers
This simple whole wheat cracker recipe will give you some of the most delicious whole wheat crackers you have ever tasted.

- Preheat an oven to 180°C/360°F fan oven, 200°C/400°F normal oven.
- Mix the flour, sugar, salt, baking powder, paprika and herbs together in a bowl. Add the butter and rub the butter into the flour until you can no longer feel any bits of butter.
- Make a well in the centre and add the water and vegetable oil. Mix to a smooth dough.
- Put the dough on a surface and knead gently for about 2 minutes to ensure the dough is well mixed.
- Take a sheet of baking paper the size of your baking tray and lay it on a flat surface. Take about one third of the dough and roll it out on the paper as thin as you can. Less than 2 mm (1/16") is ideal.
- Cut the dough into whatever shapes you wish and collect up any unusable dough. Prick the shapes all over with a fork.
- Bake the shapes for 10-12 minutes until they start to brown.
- Remove from the oven and allow to cool.
- Check that the cooled crackers are nice and firm. If any crackers are slightly soft in the middle place them on a baking tray and bake for a further 5 minutes.
Notes
The thinner you roll the dough the crisper your crackers will be. If your kitchen is warm you may find it helpful to chill the dough first before rolling.
You can play with the additives as much as you like. For example you could add:
- 1-2 tsp poppy seeds
- 1 tbsp finely grated Parmesan cheese
- 1 tsp freshly ground black pepper
If you want to add larger seeds such as sesame seed simply sprinkle them on the top of the dough before baking.
